Chinese Fried Rice


Ingredients

 
1 1/2 cups rice
 
1-2 carrots, boiled and diced
 
Salt
 
125 gms. peas, boiled
 
Alum
 
2 green chillies, chopped
 
2 eggs
 
1 onion, chopped
 
9 tablespoons ghee
 
Fried cashew nuts, optional
 
8 French beans, boiled

How to make Chinese Fried Rice

Heat sufficient water in a heavy pan; put in a tablespoon of salt and a little alum.
Bring to boiling point and put in the rice.
When the rice is half cooked, remove from the fire.
Drain, and put in cold water at once, to remove the starch.
Drain again and spread out the rice in a large shallow dish to dry.
Beat the eggs lightly; make a plain omelet, and cut it into fine strips.
Heat the ghee on a moderate fire and fry the rice, stirring continuously.
Add the boiled vegetables and mix well.
Cook on a very low fire.
If the rice is still raw, add a little water and sunnier.
Garnish with omelet and cashew nuts.
